Ingredients
  

2 cups cottage cheese

1 large cucumber, peeled and diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

2 tablespoons fresh dill, chopped (or 1 tablespoon dried)

1 tablespoon lemon juice

Salt and pepper to taste

1 tablespoon olive oil

Optional: A handful of arugula or mixed greens for serving

Instructions
 

In a large mixing bowl, combine the cottage cheese and diced cucumber.

    Add the halved cherry tomatoes and chopped red onion to the bowl.

      Sprinkle in the fresh dill, lemon juice, salt, and pepper. Drizzle with olive oil.

        Gently fold all the ingredients together until they are well combined, being careful not to mash the cottage cheese.

          Taste and adjust seasoning with more salt, pepper, or lemon juice as preferred.

            Serve the salad on a bed of arugula or mixed greens if desired, and enjoy chilled!
