Ingredients

6 cups fresh peaches, sliced (about 6-8 peaches)

1 cup granulated sugar

1 teaspoon lemon juice

1 ½ teaspoons ground cinnamon

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

Additional cinnamon sugar (1 tablespoon sugar mixed with 1/2 teaspoon cinnamon) for topping

Instructions

Prepare the Peaches: In a large bowl, combine sliced peaches, 1/2 cup of the granulated sugar, lemon juice, cinnamon, and vanilla extract. Gently toss to coat and let it sit for about 15 minutes to release juices.

Preheat Oven: Preheat your oven to 375°F (190°C).

Make the Batter: In another bowl, whisk together the flour, baking powder, remaining 1/2 cup of sugar, and salt. Gradually add the milk and melted butter, mixing until well combined and smooth.

Assemble the Cobbler: Pour the batter into a greased 9x13 inch baking dish. Pour the peach mixture with its juices over the batter. Do not stir; it will create a lovely layered effect while baking.

Add Topping: Sprinkle the cinnamon sugar mixture evenly over the top of the peaches and batter, enhancing the flavor and adding a beautiful crust.

Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

Cool and Serve: Remove from oven and allow it to cool slightly for about 10-15 minutes. Serve warm, preferably with a scoop of vanilla ice cream or whipped cream!
