Cinnamon Sugar French Toast Muffins

1 loaf of brioche or challah bread, cut into cubes (about 4 cups)

4 large eggs

1 cup milk

1/2 cup heavy cream

1/4 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup butter, melted

1/2 cup packed brown sugar

2 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Prep the Muffin Pan: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the bread cubes and set aside to stale slightly while you prepare the custard.

      Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

        Combine Bread and Custard: Pour the custard mixture over the bread cubes. Gently fold to ensure all pieces are well coated. Let it sit for about 15 minutes to allow the bread to soak up the custard.

          Fill the Muffin Tin: Using a spoon, fill each muffin cup about 3/4 full with the soaked bread mixture.

            Make the Topping: In a small bowl, mix the melted butter, brown sugar, granulated sugar, and ground cinnamon together until a paste is formed. Drizzle a small amount over each muffin to create a sweet topping.

              Bake the Muffins: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
