Chinese Beef and Onion Stir-Fry

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 large onions, sliced (preferably yellow or white)

2 cloves garlic, minced

1-inch piece ginger, minced or grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 teaspoons sesame oil

1 tablespoon vegetable oil (or as needed)

1 tablespoon rice vinegar

1 teaspoon sugar

1/4 teaspoon black pepper

2-3 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and 1 teaspoon of sesame oil. Mix well and let it marinate for at least 20 minutes in the refrigerator.

    Prepare the Sauce: In another small bowl, whisk together the remaining soy sauce, oyster sauce, rice vinegar, sugar, and black pepper. Set this sauce aside.

      Heat the Wok: Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the surface.

        Cook the Beef: Once the oil is hot, add the marinated beef in a single layer. Sear for about 2-3 minutes without stirring, allowing a good browning to occur. Then stir-fry for another minute until the beef is just cooked through. Remove the beef from the wok and set aside.

          Stir-Fry Vegetables: In the same wok, add another splash of vegetable oil if necessary, then toss in the sliced onions, minced garlic, and ginger. Stir-fry for about 3-4 minutes until the onions are translucent and slightly caramelized.

            Combine: Return the cooked beef to the wok, pour the prepared sauce over the mixture, and stir well to combine. Let everything cook together for 2-3 minutes, allowing the sauce to thicken slightly.

              Garnish and Serve: Remove from heat, garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles.
