Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

1 tablespoon sugar

1/4 cup beef broth or water

Salt and pepper to taste

Cooked jasmine rice for serving

Optional: sesame seeds and green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the beef strips with 2 tablespoons of soy sauce, cornstarch, and sesame oil. Mix well to coat the beef evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sugar, and beef broth (or water) until well mixed. Set aside.

      Blanch the Broccoli: Boil a pot of water and add the broccoli florets. Cook for about 2 minutes until bright green and slightly tender. Drain and immediately plunge the broccoli into ice water to stop the cooking process. Drain again and set aside.

        Stir-Fry the Beef: In a large pan or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until the beef is browned and cooked through. Remove the beef from the pan and set aside.

          Sauté Vegetables: In the same pan, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the blanched broccoli and cook for an additional minute.

            Combine Ingredients: Return the cooked beef to the pan with the broccoli. Pour the sauce over the beef and broccoli mixture, stirring to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.

              Serve: Remove from heat and serve hot over cooked jasmine rice. Garnish with sesame seeds and chopped green onions if desired.
