4 large bell peppers (any color)

1 pound spicy chicken sausage (casings removed)

1 cup quinoa (rinsed well)

2 cups chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Prepare the Quinoa: In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is fluffy and liquid is absorbed. Remove from heat and set aside.

    Cook the Sausage: In a large skillet over medium heat, add the diced onion and sauté until translucent (about 3-4 minutes). Add minced garlic and cook for an additional minute. Then, add the spicy chicken sausage, breaking it apart with a spatula, and cook until browned and cooked through (about 7-10 minutes).

      Combine Ingredients: Once the sausage is cooked, mix in the diced tomatoes, smoked paprika, Italian seasoning, cooked quinoa, salt, and pepper. Stir well to combine and let simmer for about 5 minutes to meld the flavors.

        Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.

          Stuff the Peppers: Fill each bell pepper with the chicken sausage and quinoa mixture, pressing down gently to pack it in.

            Add Cheese: Top each stuffed pepper with shredded mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
