Chicken Chow Mein with The Best Chow Mein Sauce

1 lb boneless, skinless chicken breasts, thinly sliced

4 cups chow mein noodles

2 tablespoons vegetable oil

2 cloves garlic, minced

1 cup shredded carrots

1 cup bean sprouts

1 cup snow peas, trimmed

1 red bell pepper, julienned

3 green onions, chopped

Sesame seeds (for garnish)

For the Best Chow Mein Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon cornstarch

1 tablespoon sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon ground black pepper

1/4 cup chicken broth

Prepare the Chow Mein Noodles: Start by cooking the chow mein noodles according to package instructions. Drain and set aside.

    Make the Chow Mein Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, cornstarch, sugar, rice vinegar, sesame oil, black pepper, and chicken broth. Ensure the cornstarch is well dissolved. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry until it’s golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Stir-fry the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and cook for about 30 seconds until fragrant. Then add the shredded carrots, snow peas, red bell pepper, and green onions. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
