Cheesy Ranch Buffalo Chicken Pretzel Bites

1 lb (450g) cooked shredded chicken

1/2 cup (120g) cream cheese, softened

1/2 cup (120g) ranch dressing

1 cup (100g) buffalo sauce (more or less to taste)

1 cup (100g) shredded cheddar cheese

1 cup (100g) shredded mozzarella cheese

1 package refrigerated pretzel dough (about 1 lb or 450g)

1 egg (for egg wash)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

Coarse sea salt (for sprinkling on top)

Instructions
 

Prepare the Chicken Filling: In a medium bowl, combine the shredded chicken, cream cheese, ranch dressing, buffalo sauce, cheddar cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well blended. Set aside.

    Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

      Prepare the Pretzel Dough: Roll out the refrigerated pretzel dough into a long rope, about 1/2 inch in diameter. Cut the rope into 1-inch pieces to create bite-sized portions.

        Fill the Pretzel Bites: Take each piece of dough and flatten it into a small disc. Add about 1 tablespoon of the chicken filling in the center, then fold the edges of the dough over the filling and pinch to seal tightly. Make sure there are no openings.

          Boil the Pretzel Bites: In a large pot of boiling water, add baking soda (about 1/4 cup) to create a pretzel bath. Boil the bites in batches for about 30 seconds each, ensuring they float to the top. Use a slotted spoon to transfer them back to the baking sheet.
