1 can (15 oz) of white beans (cannellini or great northern), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon ginger paste

1 teaspoon ground cumin

1 teaspoon garam masala

½ teaspoon turmeric powder

1 teaspoon chili powder (adjust according to spice preference)

1 tomato, diced

Salt and pepper to taste

½ cup shredded cheese (cheddar or a melty cheese of your choice)

4 slices of sturdy bread (sourdough or whole grain recommended)

Fresh coriander, chopped (for garnish)

Optional: A squeeze of fresh lime juice for serving

Sauté Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 4-5 minutes.

    Add Garlic and Ginger: Stir in the minced garlic and ginger paste, cooking for an additional 1-2 minutes until fragrant.

      Spice It Up: Sprinkle in the ground cumin, garam masala, turmeric powder, and chili powder. Cook for another minute, allowing the spices to bloom.
