12 oz cheese tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce (red or green)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Cook the Tortellini: In a large pot, bring salted water to a boil. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a deep skillet or saucepan over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.

      Add Spices and Veggies: Stir in the chili powder, cumin, paprika, salt, and pepper. Add the black beans and corn, mixing well. Pour in the enchilada sauce, stirring until everything is well combined. Allow the mixture to simmer on low for about 5 minutes.

        Combine Tortellini and Cheeses: Gently fold the cooked tortellini into the beef and vegetable mixture. Sprinkle half of the cheddar and Monterey Jack cheeses over the top and mix until they melt and the tortellini is heated through.
