Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or milk of choice)

1 medium carrot, grated

1/4 cup raisins

1/4 cup chopped walnuts (or pecans)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon vanilla extract

1 tablespoon maple syrup (or honey)

Pinch of salt

Optional: Cream cheese or yogurt for topping

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, and a pinch of salt.

    Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking.

      Once boiling, reduce heat to low and let simmer for about 5 minutes, or until the oats are cooked and have absorbed most of the liquid.

        Stir in the raisins, chopped walnuts, ground cinnamon, nutmeg, and vanilla extract.

          Add maple syrup or honey for sweetness and adjust according to taste. Mix well.

            Cook for an additional 1-2 minutes until everything is heated through and well combined.

              Remove from heat and let it sit for a minute to thicken a little more.

                Serve warm in bowls, topped with a dollop of cream cheese or yogurt if desired, and a sprinkle of extra walnuts or cinnamon for garnish.
