2 large carrots, grated

1 large apple (such as Granny Smith or Fuji), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup chopped walnuts or pecans

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

1/4 cup plain Greek yogurt or vegan alternative

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple.

    Add the raisins or dried cranberries, and chopped nuts to the bowl and mix gently.

      In a separate small bowl, whisk together the honey or maple syrup, lemon juice, and Greek yogurt until well blended.

        Pour the dressing over the carrot and apple mixture, and toss until everything is evenly coated.
