Caramel Apple Oatmeal Bake

2 cups rolled oats

2 cups almond milk (or any milk of choice)

2 medium apples, peeled and diced

1/2 cup brown sugar

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

1/2 cup caramel sauce (store-bought or homemade)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, and baking powder. Stir well to distribute all the dry ingredients evenly.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples, walnuts, and dried fruits if using.

          Assemble the Bake: Pour half of the oatmeal mixture into the prepared baking dish. Drizzle half of the caramel sauce over the top. Pour the remaining oatmeal mixture on top and then drizzle the rest of the caramel sauce over this layer.
