Bow Tie Pasta Salad

Ingredients
  

8 oz. bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup bell peppers (any color), chopped

1/2 cup black olives, sliced

1 cup baby spinach, roughly chopped

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, chop the bell peppers and red onion, slice the olives, and roughly chop the spinach.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta with the chopped vegetables, olives, and feta cheese. Pour the dressing over the pasta salad and gently toss until everything is evenly coated.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

            Garnish and Enjoy: Before serving, give it a good toss, garnish with fresh basil leaves, and adjust seasoning if necessary. Serve cold or at room temperature.
