Ingredients

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

1 tablespoon paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper to taste

1/2 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon lemon juice

Fresh parsley for garnish (optional)

Instructions

Prepare the Blackened Seasoning: In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper until well combined.

Season the Salmon: Pat the salmon fillets dry with paper towels. Rub the olive oil evenly over both sides of each fillet. Generously coat the salmon with the blackened seasoning, pressing it onto the fillets to adhere well.

Cook the Salmon: Heat a large cast-iron skillet over medium-high heat until it's very hot (about 5 minutes). Place the seasoned salmon fillets in the skillet, skin-side down, and cook for about 4-5 minutes until the skin is crispy and the salmon starts to cook through. Flip the salmon carefully and cook for an additional 3-4 minutes on the other side, or until the salmon reaches your desired doneness. Remove from the heat and set aside.

Prepare the Creamy Dijon Sauce: In a small saucepan over medium heat, combine the heavy cream, Dijon mustard, lemon juice, and a pinch of salt. Stir well and bring to a gentle simmer. Cook for about 2-3 minutes, stirring regularly, until the sauce thickens slightly. Remove from heat.

Serve: Place each salmon fillet on a plate and drizzle the creamy Dijon sauce over the top. Garnish with fresh parsley if desired.
