Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly cracked

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 cloves garlic, minced

1-inch piece ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

2 tablespoons vegetable oil

1 teaspoon sesame oil

1 tablespoon rice vinegar

Salt to taste

Sliced green onions for garnish

Instructions

Marinate the Chicken: In a bowl, combine chicken pieces with soy sauce, oyster sauce, half of the black pepper, and cornstarch. Mix well to coat the chicken, cover, and marinate for at least 30 minutes.

Prepare the Stir-fry Base: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, sautéing until fragrant (about 30 seconds).

Cook the Chicken: Add the marinated chicken to the skillet and cook for 5-7 minutes until browned and cooked through, stirring occasionally to ensure even cooking.

Add Vegetables: Toss in the sliced onion, red and green bell peppers. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Season and Finish: Drizzle with sesame oil, rice vinegar, remaining black pepper, and salt to taste. Stir well to combine all flavors and let it cook for an additional minute.

Serve: Transfer to a serving platter, garnish with sliced green onions, and serve hot over steamed rice or noodles.
