Biscuits and Chorizo Gravy

For the Biscuits:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup unsalted butter, chilled and cubed

3/4 cup buttermilk

For the Chorizo Gravy:

1/2 lb chorizo sausage, casing removed and crumbled

3 tbsp unsalted butter

1/4 cup all-purpose flour

2 cups milk (whole or 2%)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Optional: chopped fresh parsley for garnish

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Add the chilled, cubed butter into the flour mixture. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.

          - Pour in the buttermilk and gently stir until just combined. Be careful not to overmix.

            - Turn the dough onto a floured surface and gently pat it into a rectangle about 1 inch thick. Fold the dough over itself a couple of times to create layers, then cut out biscuits with a 2-inch round cutter.

              - Place the biscuits on the prepared baking sheet and brush the tops with a bit of melted butter if desired.

                - Bake for 12-15 minutes or until golden brown. Remove from oven and set aside.

                  Prepare the Chorizo Gravy:

                    - In a large skillet over medium heat, add the crumbled chorizo. Cook until browned and cooked through, about 5-7 minutes. Remove the chorizo with a slotted spoon and leave the drippings in the pan.

                      - In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux (it should be light golden in color).

                        - Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the gravy thickens, about 3-5 minutes.

                          - Stir in the cooked chorizo, garlic powder, onion powder, and season with salt and pepper to taste. Simmer for another 2-3 minutes.

                            Serve:

                              - Split the warm biscuits in half and ladle the chorizo gravy generously over the top.

                                - Garnish with chopped fresh parsley if desired. Serve immediately and enjoy this hearty Southern dish!
