Originating primarily from the provinces of the Philippines, this rice cake is often associated with the Christmas holiday, specifically during the traditional Simbang Gabi or Night Masses. Bibingka Recipe

2 cups rice flour

1 cup coconut milk

1 cup water

1 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup grated coconut (fresh or desiccated)

2 whole eggs

4 tablespoons unsalted butter, melted (plus extra for greasing)

2-3 banana leaves or parchment paper (for lining the baking dish)

1/4 cup cheese (optional, such as mozzarella or Edam, grated)

1/4 cup salted eggs, sliced (optional)

Instructions
 

Preheat your oven to 375°F (190°C). If using banana leaves, briefly pass them over an open flame or boil them for a few minutes to soften. Line your baking dish (about 9-inch round or square) with the banana leaves or parchment paper, making sure it covers the sides.

    In a large mixing bowl, combine rice flour, sugar, baking powder, and salt. Stir well to ensure the baking powder is evenly distributed.

      In another bowl, whisk together the coconut milk, water, eggs, and melted butter until well combined. Gradually pour this mixture into the dry ingredients, stirring continuously until a smooth batter forms.

        Stir in the grated coconut, ensuring it's evenly mixed throughout the batter. If using, fold in the grated cheese for a savory twist.

          Pour half of the batter into the prepared baking dish. If you are using salted eggs, place the slices evenly over the batter. Then pour the remaining batter on top, ensuring the salted eggs are well covered.

            Bake in the preheated oven for about 30-40 minutes, or until the bibingka is golden brown and a toothpick inserted into the center comes out clean.

              In the last 5-10 minutes of baking, you may add more grated cheese on top if desired, allowing it to melt and turn golden.

                Once baked, remove from the oven and brush the top with melted butter for a glossy finish. Let it cool for a few minutes before slicing.

                  Serve warm, optionally topped with additional grated coconut, cheese, or a sprinkle of sugar based on your preference. Enjoy!
