4 cups fresh blackberries (washed and stems removed)

2 tablespoons lemon juice (freshly squeezed)

1 cup granulated sugar

1/4 cup pectin (no sugar needed or low sugar if preferred)

1/2 teaspoon vanilla extract (optional for added depth)

1/4 teaspoon salt

Prepare the Blackberries: In a large mixing bowl, mash the blackberries lightly with a fork or potato masher. You want to release the juices while still keeping some chunky pieces for texture.

    Combine Ingredients: In a large saucepan, combine the mashed blackberries, lemon juice, sugar, pectin, and salt. Stir together until everything is well mixed.

      Cook the Mixture: Place the saucepan over medium heat. Stir constantly until the mixture comes to a full boil. Continue to boil for about 5 to 7 minutes, or until the mixture thickens and reaches a temperature of 220°F (104°C).

        Test for Consistency: To check if the jam is ready, place a small spoonful on a plate and let it cool for a minute. Run your finger through it; if it holds its shape and doesn’t run back together, it's perfect.

          Add Vanilla (Optional): If using vanilla extract, stir it in just as the jam is about to be removed from the heat.

            Jar the Jam: Carefully ladle the hot blackberry jam into sterilized glass jars, leaving about 1/4 inch of headspace at the top. Seal the jars with sterilized lids.

              Cool and Store: Allow the jam to cool at room temperature. Once cooled, store in the refrigerator for immediate use, or process in a boiling water bath for longer storage (10 minutes for half-pint jars).
