Originating from Mexico, quesadillas are simple yet satisfying, typically made with a tortilla filled with cheese and other ingredients, then folded and cooked until crispy. BBQ Chicken Quesadilla

Packed with shredded chicken, gooey mozzarella and cheddar cheese, and a touch of BBQ flavor, these quesadillas are easy to make and perfect for a quick meal. With sweet red onions, corn, and optional jalapeños for a kick, you'll love every cheesy bite. Perfect for sharing (or not)! Serve with sour cream and salsa for a delicious twist. 2 cups cooked chicken, shredded

1 cup BBQ sauce (your choice of flavor)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 medium red onion, thinly sliced

1 cup corn kernels (fresh or frozen)

1 jalapeño pepper, finely diced (optional)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh cilantro, for garnish

Sour cream and salsa, for serving

Instructions
 

Prepare BBQ Chicken: In a medium bowl, combine shredded chicken and BBQ sauce. Mix well until the chicken is fully coated. Set aside.

    Cook Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and cook for 5 minutes until softened. If using, stir in the jalapeño pepper and corn, cooking for an additional 2-3 minutes. Remove from heat and set aside.

      Assemble Quesadillas: Lay out two tortillas on a clean surface. On each tortilla, evenly distribute half of the BBQ chicken mixture, followed by half of the onion-corn mixture, and top with half of the mozzarella and cheddar cheese. Place the second tortilla on top of each assembled quesadilla.

        Cook Quesadillas: Wipe the skillet clean and heat the remaining olive oil over medium heat. Carefully place one quesadilla in the skillet and cook for 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Flip carefully and cook the other side for another 3-4 minutes. Repeat for the second quesadilla.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute before cutting them into wedges. Garnish with fresh cilantro and serve with sour cream and salsa on the side.
