BBQ Chicken Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup cooked shredded chicken

1/2 cup barbecue sauce (your favorite brand)

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1 tablespoon butter (softened)

1/4 cup red onion, thinly sliced (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a medium bowl, mix the shredded chicken with the barbecue sauce until well combined. Adjust the sauce according to your taste preference.

    Heat a skillet over medium heat.

      Spread a thin layer of butter on one side of each slice of sourdough bread.

        Place one slice, butter-side down, in the skillet. Layer half of the cheddar cheese on top.

          Spread the barbecue chicken mixture over the cheese, then top with the remaining cheddar cheese and mozzarella.

            If using, add the thinly sliced red onions for a bit of crunch and flavor.

              Top with the second slice of sourdough, butter-side up.

                Grill for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt.

                  Carefully flip the sandwich using a spatula, and grill the other side for another 3-4 minutes until golden brown and the cheeses are melted.

                    Once done, remove from the skillet and let it sit for a minute before cutting it in half.

                      Garnish with fresh cilantro or parsley if desired, and serve hot.
