1 lb chicken breast, cut into bite-sized pieces

1 cup cornstarch

1 tsp salt

½ tsp black pepper

½ tsp garlic powder

¼ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

2 cups cooked jasmine rice

1 cucumber, julienned

1 cup shredded carrots

½ cup green onions, sliced

¼ cup chopped cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

In a mixing bowl, combine cornstarch, salt, black pepper, and garlic powder. Toss the chicken pieces in the mixture until fully coated.

    Heat a large skillet over medium-high heat and add enough oil to cover the bottom. Once hot, add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes. Remove and place on a paper towel to drain excess oil.

      In another bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust the heat by adding more sriracha if desired.

        In serving bowls, layer the cooked jasmine rice as the base. Top with crispy chicken, followed by shredded carrots and julienned cucumber.

          Drizzle the Bang Bang sauce generously over the chicken and veggies. Add sliced green onions and sprinkle cilantro on top.

            Serve with lime wedges on the side for an extra burst of flavor.
