Bananas Foster French Toast with Homemade Banana Bread

For the Banana Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar (can adjust to taste)

1 large egg, beaten

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon (optional)

For the Bananas Foster Topping:

2 ripe bananas, sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1 teaspoon cinnamon

1/4 cup dark rum (optional)

1 teaspoon vanilla extract

For the French Toast:

4 thick slices of homemade banana bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Butter for cooking

Instructions
 

Make the Banana Bread:

    - Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

      - In a mixing bowl, combine the mashed bananas with the melted butter.

        - Stir in the baking soda and salt. Mix well.

          - Add sugar, egg, and vanilla extract; stir to combine.

            - Gradually add the flour and cinnamon, folding until just mixed. Do not over-mix.

              - Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.

                - Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                  Prepare the Bananas Foster Topping:

                    - In a skillet over medium heat, melt the butter and stir in the brown sugar and cinnamon until combined and bubbly.

                      - Add the sliced bananas and cook for about 1-2 minutes until they soften slightly.

                        - If using dark rum, carefully add it to the skillet and ignite with a long lighter to flambé (optional).

                          - Cook until the rum burns off and the sauce thickens slightly, then add vanilla extract and stir. Remove from heat and set aside.

                            Prepare the French Toast:

                              - In a bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.

                                - Heat a skillet or griddle over medium heat and melt a small amount of butter.

                                  - Dip each slice of banana bread into the egg mixture, allowing it to soak slightly but not become too soggy.

                                    - Cook each slice in the skillet until golden brown on both sides, about 2-4 minutes per side.

                                      Assemble:

                                        - Place the French toast on a serving plate, and generously spoon the warm Bananas Foster topping over each slice.

                                          - Serve immediately, optionally with whipped cream or a scoop of vanilla ice cream.
