Ingredients
  

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

1/4 cup chopped walnuts or pecans (optional)

1 tablespoon chia seeds (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the mashed bananas, honey (or maple syrup), melted coconut oil, and vanilla extract. Mix until smooth.

      In another bowl, whisk together the rolled oats, whole wheat flour, baking powder, cinnamon, and salt.

        Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.

          Gently fold in the blueberries, chopped nuts, and chia seeds, if using.

            Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each cookie.

              Flatten each cookie slightly with the back of the spoon for an even bake.

                Bake in the preheated oven for 12-15 minutes or until the cookies are lightly golden around the edges.

                  Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
