Baked Salmon Sushi

2 cups sushi rice

2 1/2 cups water

1/3 cup rice vinegar

3 tablespoons sugar

1 teaspoon salt

1 pound salmon fillet (skinless)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 avocado, sliced

1 cucumber, julienned

4 sheets of nori (seaweed)

1 tablespoon wasabi (optional)

Pickled ginger, for serving

Sesame seeds for garnish

Green onions, chopped for garnish

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then cover and reduce to a simmer for 20 minutes. Remove from heat and let it sit for 10 minutes, covered.

    Season the Rice: In a small saucepan, gently heat the rice vinegar, sugar, and salt until dissolved. Once the rice is fluffy, transfer it to a large bowl and pour the vinegar mixture over it. Gently fold the rice using a spatula to evenly distribute the seasoning without mashing the grains. Allow the rice to cool to room temperature.

      Prepare the Baked Salmon: Preheat your oven to 375°F (190°C). Place the salmon fillet on a baking tray lined with parchment paper. Brush with soy sauce and sesame oil. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork. Allow to cool slightly, then flake the salmon into smaller pieces.

        Assemble the Sushi: On a bamboo sushi mat or a clean surface, lay a sheet of nori shiny side down. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving about 1 inch at the top edge. Place a few pieces of flaked salmon, slices of avocado, and julienned cucumber along the bottom edge of the rice-covered nori.

          Roll the Sushi: Start rolling the sushi tightly from the edge nearest you, using the mat to help shape and press as you go. When you reach the top edge without rice, use a little water to seal the nori. Repeat with the remaining nori sheets and fillings.

            Slice and Serve: Using a sharp, wet knife, slice each roll into bite-sized pieces. Arrange on a serving platter. Garnish with sesame seeds and chopped green onions. Serve with wasabi and pickled ginger on the side.
