Baked Feta Pasta

8 oz. pasta of your choice (penne or fusilli works well)

200g feta cheese (block)

2 cups cherry tomatoes (halved)

1/4 cup olive oil

4 cloves garlic (minced)

1 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh basil (chopped)

Zest of 1 lemon

1/2 cup grated Parmesan cheese (for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large oven-safe dish, combine the cherry tomatoes, olive oil, minced garlic, red pepper flakes, salt, and pepper. Stir to combine and spread evenly in the dish.

      In the center of the tomato mixture, place the block of feta cheese. Drizzle a bit more olive oil on top of the feta, and sprinkle with black pepper.

        Bake in the preheated oven for about 30 minutes, or until the tomatoes burst and the feta is soft and slightly golden.

          While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.

            Once the feta and tomatoes are done, remove the dish from the oven. Use a fork to mash the feta and tomatoes together until creamy and well combined.

              Add the drained pasta to the tomato-feta mixture. Toss everything together, adding a bit of reserved pasta water if needed to reach your desired consistency.

                Stir in the chopped basil and lemon zest.

                  Serve warm, garnished with grated Parmesan cheese and extra basil on top.
