Baked Boursin Spaghetti Squash

1 medium spaghetti squash

8 oz Boursin cheese (herb and garlic flavor recommended)

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and season with salt and pepper.

      Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the flesh is tender and easily shredded with a fork.

        While the squash is baking, heat a skillet over medium heat and add a splash of olive oil. Sauté the minced garlic for about 1 minute, until fragrant. Add halved cherry tomatoes to the skillet and cook for another 5 minutes until they soften. Season with salt, pepper, and red pepper flakes if using.

          Once the spaghetti squash is ready, let it cool for a few minutes, then use a fork to shred the flesh into spaghetti-like strands and transfer to a large mixing bowl.

            In the mixing bowl, add the Boursin cheese, sautéed tomatoes, and half of the Parmesan cheese. Toss everything together until well combined. Adjust seasoning if needed.

              Transfer the mixture back into the empty squash shells and sprinkle with the remaining Parmesan cheese on top.

                Return the filled squash to the oven and bake for an additional 10-15 minutes, or until heated through and golden on top.

                  Remove from the oven, garnish with fresh basil leaves, and serve warm.
