2 ripe avocados, diced

1 cup cherry tomatoes, halved

½ cucumber, diced

½ red onion, thinly sliced

1 cup corn, cooked (fresh or canned)

1 cup black beans, rinsed and drained

¼ cup fresh cilantro, chopped

½ lime, juiced

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper, to taste

Feta cheese (optional), for topping

Sliced radishes (optional), for garnish

Instructions
 

In a large bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, sliced red onion, cooked corn, and black beans.

    In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper until well combined.

      Pour the dressing over the salad ingredients and gently toss to coat, being careful not to mash the avocados.

        Sprinkle chopped cilantro over the top and toss lightly again.
