Asiago Creamy Baked Onions

4 large sweet onions

1 cup heavy cream

1 cup grated Asiago cheese

2 tablespoons butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon salt

½ teaspoon black pepper

½ cup breadcrumbs (preferably panko)

2 tablespoons freshly chopped parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Onions: Carefully slice the tops off the onions and scoop out the centers using a small melon baller or spoon, leaving about ½ inch of the onion wall intact. Chop the scooped-out onion and set it aside.

      Make the Creamy Filling: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped onion you scooped out, and cook for 3-4 minutes until soft.

        Add Cream and Cheese: Reduce heat to low, and add the heavy cream, salt, pepper, and fresh thyme to the pan. Stir in the grated Asiago cheese until well combined. Allow the mixture to simmer for a few minutes until it thickens slightly.

          Fill the Onions: Carefully spoon the creamy mixture into each hollowed onion until they are filled to the top.

            Top with Breadcrumbs: Sprinkle breadcrumbs over the filled onions, ensuring an even layer on top of each.

              Bake the Onions: Place the filled onions in a baking dish and pour a little water (about 1/4 cup) at the bottom of the dish to help steam the onions as they bake. Cover with aluminum foil and bake for 30 minutes.

                Finish Baking: Remove the foil and bake for an additional 15-20 minutes, or until the tops are golden brown and the onions are tender when pierced with a fork.
