2 large onions, thinly sliced

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for heat)

1 large egg

1/2 cup buttermilk (or milk)

1/4 cup cornmeal

Oil for frying (vegetable or canola)

Fresh parsley, chopped (for garnish)

Prepare the Onions: Start by slicing the onions thinly. Place them in a bowl and sprinkle a bit of salt over them. Let them sit for about 10 minutes to draw out moisture. Afterward, pat the onions dry with a paper towel.

    Make the Batter: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and cayenne pepper (if using). In a separate bowl, beat the egg and mix in the buttermilk until well combined.

      Combine: Pour the egg and buttermilk mixture into the dry ingredient bowl. Stir until just combined, then fold in the cornmeal and the sliced onions. The batter should be thick and coat the onions.

        Heat the Oil: In a deep skillet or frying pan, pour enough oil to cover the bottom by about 1/2 inch. Heat the oil over medium heat until hot, but not smoking (about 350°F or 175°C).
