1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 teaspoon paprika

Salt and pepper to taste

12 mini taco shells

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup sour cream

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until soft. Add the minced garlic and ground chicken, cooking until the chicken is no longer pink, about 5-7 minutes.

      Season: Stir in the taco seasoning, paprika, salt, and pepper. Cook for an additional 2-3 minutes, letting the flavors meld together.

        Prepare Taco Shells: While the chicken is cooking, arrange the mini taco shells upright in a baking dish. If they don’t stand up well, you can use crumpled foil to help support them.

          Fill Taco Shells: Carefully spoon the cooked chicken mixture into each taco shell, filling them generously.

            Add Cheese: Top the chicken-filled tacos with shredded cheddar cheese.

              Bake: Place the baking dish in the preheated oven and bake for about 10 minutes, or until the cheese is melted and the taco shells are golden.

                Garnish and Serve: Remove from the oven and let cool for a minute. Top with shredded lettuce, diced tomato, and a dollop of sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
